Fungi are eukaryotic single celled organisms floating around everywhere. Yeast is a type of fungi used in making bread. Mycorrhizal fungi live in the soil and connect to plant roots to exchange minerals and water with sugars to help plants survive drought. In biotechnology, yeast can have a gene inserted in it to produce useful proteins, such as human insulin.
